How to Make Googly Eyes

Learn how easy it is to make edible googly eyes
No eggs nor meringue powder necessary. Just three simple ingredients

Last week I posted my recipe for spooky peanut butter and chocolate spider cookies, as a great treat for this Halloween!

Have you tried them yet?!? I have to say, if you taste them once, you'll be baking them again! I'm down to my third batch so far, and I really need to stop. 
But I guess, when it's comes to chocolate and peanut butter, I simply can't control myself :) 
Today I want to show you how you can still make cute and fun Halloween snacks, but in a super healthy treat. All you need are these googly eyes and bit of creativity.

You can now turn any healthy and boring snacks into fun little characters.
Googly eyes are perfect for any Halloween treats but not only. They make great table decoration and fun snacks for any kids' party or lunch box, any time of the year.
These are so fun and quite easy to make ... and a lot cheaper than store bought googly eyes. You can make them in any size and shape.
I certainly had so much fun whipping these up, decorating fruit and veggies and taking pictures. Once you make them once, you can store in a little jar and have them ready for the next occasion.
This recipe for royal icing doesn't use raw egg whites nor meringue powder. Just powdered sugar, hot water, and mini chocolate chip for the middle of the eye. I flavored mine with a few drops of almond extract, so they don't taste just like sugar. But you can use your favorite aroma. Make sure the extract doesn't have a color (like brownish of the vanilla extract) or your eyes won't turn as white. 
One recommendation, make sure you start with a super thick paste-like icing, and add little sips of water only until you can mix it. Add more sugar if the icing ends up too thin. You can see how thick is mine in the following video.

INGREDIENTS:

YIELD: +100 eyes
    • 1 cup (125 gr) of powdered sugar
    • about 1 tablespoon of hot water
    • 1/8 teaspoon of almond extract
    • about 100 mini chocolate chips 

PREPARATION:

TIME: 20 minutes, plus at least 6 hours inactive
    In a bowl add the powdered sugar with one tablespoon of hot water, and the almond extract.
    Whisk until smooth. It needs to look really dry at first. Keep on mixing and add sips of water if you can't mix and make it smooth. But just tiny bit of water at a time (1/8 of a teaspoon). You want the icing to be really thick.

    Spoon the icing into a piping bag with a small round tip, or just cut the tip of the bag. Start with a small hole, and make it bigger if you need to.
    Line a baking sheet with wax or parchment paper, and pipe little round eyes to the desired size. Make sure they are thick enough. If too thin they will break more easily.

    Work in batches of 10 or so, adding a mini chocolate chip to the middle, or a little off to the side to make the eyes googly.

    You should end up with at least 100 eyes (depending on the size).
    Let the eyes dry and harden at room temperature for at least 6 hours.
    You will know when the eyes are ready, they will peel off easily from the paper without breaking.

    Store in a jar, and use when you need! Have fun :)
