Sausage and Zucchini Rolls





I hope your Sunday was as good as mine!
Yesterday, after our usual morning at the beach, we went to a really fun pool party at a friend's house.
It was the perfect afternoon: warm and sunny; the kids had a blast playing and jumping in the water; I was very happy to catch up with some friends I hadn't seen for a while. And to make it all better, the host cooked some amazing grilled steaks. Really yummy!
That is where I got the idea for tonight's dinner: sausages and zucchini rolls.
This is an irresistible savory dish, perfect for your next barbecue, dinner party or Sunday brunch. And why not for a fun dinner at home? I don't see anything wrong with breakfast links for supper. This recipe gives you a simple way to incorporate some veggies in your kids dinner. They might not even notice the zucchini around the sausage!
Also, look down here: there are only two ingredients that you really need. Perfetto!

Ingredients:
  • three medium zucchinis
  • one package, 12 oz,  breakfast sausage links (14 sausages)
  • salt
Preparation time: 40 minutes

Directions:

Step 1: Cut the zucchinis lengthwise in thin slices (about 3 mm or 1/8 inch in thickness)
Step 2: Grill the zucchini for one minute on each side, sprinkling slightly with salt. Don't cook the zucchini too much. They just need to be tender enough to fold around the sausage without breaking.
Step 3: Cook the sausage as you prefer. I grilled them on the same pan for about 15 minutes, over medium heat.
Step 4: When ready, roll one slice of zucchini for each sausage, and secure with a toothpick, as shown in the picture below.
Step 5: Place the rolls back on the grilling pan for a few minutes, and finish cooking the zucchini.

Serve hot! Enjoy :)
