Pollo alla Pizzaiola - Italian Chicken alla Pizzaiola

 Let's bring to the table two dinner favorites in one dish with this Italian Chicken Alla Pizzaiola

If you are looking for a dinner idea that is ready in no time and so tasty that the whole family is going to love it, look no further! This Italian Chicken Alla Pizzaiola has it all. It's easy to make, and ready in no more than 30 minutes from start to finish. It has all of pizza's best features: from the melty mozzarella to the lick-your-fingers-delicious tomato sauce. AND best of all, it has the juicy chicken fillets loaded with flavors.

In this recipe, to add extra flavor I sprinkle Knorr® Granulated Chicken Bouillon to the chicken breast while browning the meat. This bouillon is so versatile that I always keep a jar in my cupboard. I use it to enhance the flavor of my soups and sauces, stews and veggies, or any dishes with chicken. You can find Knorr® Granulated Chicken Bouillon in the International/Hispanic aisle at your local Jon's Fresh Marketplace, that’s where I purchased mine!

Who wouldn't love a chicken dish that tastes like pizza anyways!?! 
As always, you can change up the recipe to your taste. I added a little Mediterranean flavor with spoon full of capers, and a little heat with a peperoncino or two (extra spicy Italian dry peppers).

You can also substitute with your favorite olives or anchovies. Or don't add any of these at all for a more kid-friendly dish. Either way, make sure to serve it up with a few thick slices of freshly baked bread. You will need it to soak up all that yummy sauce.

INGREDIENTS:

YIELD: 4 servings
    • 1.5 lb. (680 gr) chicken breast, boneless and skinless, cut in 4 thick slices
    • 2 tablespoons extra virgin olive oil
    • 3 garlic cloves, crushed 
    • 1 tablespoon Knorr® Granulated Chicken Bouillon
    • dried oregano, to taste
    • salt, to taste
    • pepper, to taste
    • one 14.5 oz. can (410 gr) crushed tomatoes
    • 1 tablespoon capers, drained
    • 1 large fresh mozzarella, cut in 4 slices
    • fresh basil leaves

PREPARATION:

TIME: 30 minutes
    In a large pan (braiser or frying pan with lid), heat the olive oil with the crushed garlic. Add the four pieces of chicken and brown over medium heat on both sides. It should take about 2 minutes 

    Season the chicken with the Knorr® Granulated Chicken Bouillon, oregano, pepper and a tiny bit of salt. 

    Add the crushed tomatoes. 

    And add the capers.

    Bring to a boil. Cover the pan and cook over medium-low heat for 12 to 15 minutes, turning the meat half way, until the chicken is cooked through. Adjust with salt if needed.

    Add one thick slice of mozzarella on top of each chicken piece. 

    Cover the pan and simmer for about 3 more minutes, until the mozzarella is melted. Top with the fresh basil leaves and serve with a few slices of bread on the side. Enjoy!
