Grilled Salmon Tacos

Kicking off the New Year with these super-easy, crazy-delicious, wholesome salmon tacos

Have you reflected on the highs and lows of 2019 and made any good resolutions for the New Year?!? 2019 has been an exhilarating, challenging and super-busy year for me. It taught me to always embrace what comes along with a positive attitude, be grateful for all I have, and never forget to take care of myself (and my family of course!) no matter how busy life gets. 
So one of the things I promised myself for 2020 is to try my best and set aside time for my favorite workout (and not feeling guilty about it), and as always, make healthy and scrumptious homemade meals to enjoy with my family. 

So here is one easy dinner idea that my boys love, and that might become one of your favorite too once you try it: Fresh and simple, super easy and light tacos with grilled salmon topped with shaved fennel, cubed avocados and tomatoes, and a drizzle of fresh lime juice and olive oil. 
I know, I know. It's not Tuesday. But so what?!? It's the New Year so let's embrace a delicious meal anytime it comes along and maybe I can start the new trend - #AnyDayTacos ;)
Salmon is one of my favorite fish to serve because is so versatile and wholesome. It's rich in Omega-3 Fatty Acids, it's a great source of protein, vitamin B, potassium and antioxidants, to name some of the health benefits.
For this recipe I use Gorton's Natural Catch Grilled Salmon. This salmon is char-grilled, 100% sustainable wild-caught, free of artificial and GMO ingredients, high in protein and low in carbs. It's a convenient product to always have in the freezer. Because the secret to whip up a healthy last-minute dinners starts at the grocery store, when you stock your fridge and pantry with wholesome ingredients. 

Today I served my salmon with a fresh and easy to find ingredients: avocado, tomatoes and fennel. All packaged in a fun and cute taco form. Ah! 2020 - I bet you didn't expect this coming from the Italian me ;)

To prepare the salmon, all you have to do is bake it in the preheated oven at 400 degrees F for 15 to 17 minutes. Make sure to add the tortillas to the oven for the last few minutes to make them warm and soft. While the oven does its magic, chop up the salad ingredients and mix. All is left to do is fill the tacos and dinner is served. No more than 20 minutes from start to finish. Can't beat that!

INGREDIENTS:

YIELD: 2 servings
    • 2 Gorton's Classic Grilled Salmon Fillets (1 package, 6.3 oz, 180 gr)
    • 6 tortillas, corn or flour
    • 1/4 fennel bulb, thinly slices
    • 1 avocado, peeled, pitted and diced
    • 4 campari tomatoes, cut in eights 
    • 1 lime, juice plus extra for serving
    • salt and pepper to taste
    • 1 tablespoon olive oil
    • jalapeno, sliced (optional)
    • cilantro, for garnish (optional)

PREPARATION:

TIME: 20 minutes
    Preheat the oven to 400 degrees F.  Arrange the salon on a metal baking pan, seasoned side up and bake for 15 to 17 minutes.
    In the meantime, prepare the fennel, tomatoes and avocados. Cut and toss in a bowl with lime juice, salt, pepper and a drizzle of olive oil.
    If you like, brush the tortilla lightly with olive oil, and place in the oven for 3 to 4 minutes.
    Cut the salmon into chunks and assemble the tacos with some salmon and veggies. Top with jalapeno and cilantro if you like. Serve immediately with lime wedges on the side.
