Ultimate Breakfast Sandwich Perfect for Father's Day

Let's celebrate this Father's Day with something special, made with love for your amazing dad. After all, there's nothing like waking up to the aroma of grilled bacon and fried egg, and starting your Sunday with a scrumptious breakfast in bed. 
Sometimes a delicious homemade breakfast is all it takes!

What's not to love about this breakfast sandwich?!? It has it all. The crispy bacon, the drippy egg, the melty cheese, the healthy tomatoes and lettuce. All squooshed between two perfectly grilled, crispy-on-the-outside, soft on the inside bread slices. 
Even if you are not a cook, this sandwich is super easy to prepare. Make sure to follow the step-by-step directions below to figure out how to get perfectly crispy bacon, and soft fried eggs. And remember, serve your sandwich open. Things get deliciously messy once you close it :)

INGREDIENTS:

YIELD: one sandwich
    • 1 bread bun (or two thick slices)
    • 1 egg
    • 1 or 2 slices of gruyere cheese
    • 2 slices of bacon, halved  
    • tomato and lettuce
    • salt and pepper
    • olive oil

PREPARATION:

TIME: 15 minutes
    Start by grilling the bacon slices: Using a grilling pan (cast iron griddle pan or heavy skillet), place the bacon on the pan without overlapping. Turn on the heat to medium-high, and cook the slices while turning them often, until cooked to the desired crispiness.

    Cut the bread bun in half, and place on the same pan next to the bacon. Grill lightly on all sides, using the fat that's in the pan. For a healthier version, grill the bread on a clean skillet drizzling the slices lightly with olive oil. Toast on all sides.
    Place the bun face up on a baking sheet. Add the cheese on one side (or both if you prefer).
    Add the bacon on the other side of the bun and keep warm in the oven (at 300°F) until the cheese melts and while preparing the rest of the sandwich.
    Fry the egg. In a small skillet add one to two tablespoons of olive oil and heat for one minute over medium heat. Crack the egg in the pan (careful not to break the yolk) and cook to desired firmness. Make sure the egg white is fully cooked, while the egg yolk stays a little runny.
    One suggestion is to use a small spoon to pick up some of the oil from the side of the pan and pour it over the egg. The heat of the oil helps cooking the egg on top without the need to flip it (which might break the yolk or cook it too much).
    Season with salt and pepper.

    Assemble the sandwich. Gently place the fried egg on top of the melted cheese. Add tomatoes slices. Serve the sandwich open with lettuce on the side.
