Spaghetti with Lentil Sauce

Tonight I would like to present a primo piatto  that is healthy and filling. It's perfect for these cold winter evenings... well, not so cold here in Los Angeles.
Can you believe that there are 72 degrees outside right now?!?

The spaghetti con salsa di lenticchie is a nutritious dish, that combines vegetables and pulse, rich in fibers, proteins and carbohydrates. A great vegetarian pasta!


Here is what you will need to prepare this easy and nutritious pasta:
(portions for 4 people)

Ingredients

  • 3 tablespoons of extra virgin olive oil
  • 1/2 onion chopped
  • 1 carrot chopped
  • 1 clove garlic, crushed
  • 1 fresh rosemary sprig
  • 1 cup of dried lentils    I like the Trader's Joe small green lentils. You can even buy these on amazon - see link     below!
  • 1 cup of crushed tomatoes
  • 12 oz of  thick spaghetti
  • salt


Directions:

Step 1: In a large saucepan add olive oil, onions, carrots, garlic and rosemary.
Step 2: Saute over medium heat for about 5 minutes.

Step 3: Add lentils, crushed tomatoes, one cup of water and salt to taste.
Step 4: Let it cook over medium-low heat for 30-40 minutes. Add more water when necessary. Remove rosemary sprig and garlic.
Step 5: Cook the spaghetti according to package directions. Drain, add to saucepan, mix well and serve immediately.
